The seeds are getting big and ready for transplanting into the garden. Going in the ground this week will be cabbage, broccoli, cauliflower, bok choi and lettuce.
It's a salad in the making and so we would like to share a favorite salad dressing we enjoy at the Fisher family dinner table. This tofu salad dressing is delightful on whatever lettuce salad the season brings you.
Tofu Salad Dressing
1/4 cup Oil
1/4 cup Lemon Juice
2 tsp Salt
1 tsp Basil
1/2 tsp Oregano
1 14oz package Firm Tofu, cubed
Mix ingredients together and let it marinate in the fridge overnight or at least a few hours before adding to your favorite salad.
